Recipe: Wine friendly vinaigrette for salads!

Salad Vinaigrette

So, we’ve just about got a whole meal for your valentine’s dinner posted. We’ve had a cheese course to kick it off  with, an entree, and a dessert so far. This is the last recipe for our valentine’s dinner this year and I was a bit perplexed about posting it; do I insult you with a salad recipe? Well, I got to thinking about it and most of the time we buy this really crappy salad dressing, or we mix what has become a classic vinaigrette recipe made from (typically) apple cider vinegar, or a bit better balsamic vinegar… and usually the dressing clashes with most wines. However, the classic definition of a vinaigrette is  3 parts oil to one part vinegar, affording you more options that are a bit easier to pair with…hence the finale recipe for the valentine’s dinner!

Vinaigrette Ingredients:

1 cup High quality extra virgin olive oil

2/3 cup lemon juice

3 cloves finely minced garlic

1/3 cup chives

2 teaspoons finely ground fresh ginger root

1/2 teaspoon dried oregano

Salt and Black Pepper to taste

In a good mixing bowl, pour olive oil and everything except the Lemon Juice and whisk this together and place in the microwave for 30 seconds. Allow this mixture to cool to room temperature while you put the remainder of your salad together.

Once, this solution has cooled, vigorously whisk again and drizzle the lemon juice in slowly. The solution will turn creamy as you whisk the acidic lemon juice in, once all the juice is whisked in- stop whisking and pour the amount needed over your salad to dress it and serve!

Now, for the salad itself, I like it simple, clean, fresh and quick.

I take a head of leaf lettuce (Boston Bib works well and has great color and flavor) and tear into bite size pieces

Tomatoes, coarsely chopped

Cucumbers, coarsely chopped

Mushrooms, coarsely chopped

Apple, medium chop

Pear, medium chop

Croutons

Crispy bacon, crumbled

 

Toss together and lightly dress with the vinaigrette.

 

Wine pairing: A crisp clean Sauvignon Blanc such as Echeverria Sauvignon Blanc.
