Say the name as if you were sneezing:ar-DRAH-han. West Cork has become a breeding ground for washed-rind cheese. Not the soap and water washed, but the soft aromatic saltwater washed types. The Burns’ are third generation dairy farmers who have developed a genuine love and skill for cheesemaking. Ardrahan is handcrafted with pasteurized cow’s milk and vegetarian rennet, with a creamy, rich consistency and undertones of ocean air.
